I accidentally (permanently) deleted a few folders of music after I put them on my Zen Vision M, but I can't take them off the Zen and restore them to my computer...
Is there a program that can save my Ry Cooder music collection?

Did you delete the folders from your PC after loading the to your ZV:M?
If so, plug the player into your PC. As long as it's correctly recognized, you should be able to browse it using Windows Explorer and find your tracks somewhere inside the music folder of the ZV:M.

I figured it out, thank you, Creative Explorer doesn't let you drag files out but it lets you right click copy and paste them back to your computer???? weird.

Plus when you plug in your zen, you should be able to click on it from 'my computer' and navigate through the files that way.

Generally, yes; but it depends on the nature of the MTP driver being used. Creative's MTP driver is lacking in features and robustness, but should be enough to be able to get your files copied off your player. The MTP driver that comes with WMP11 or with Windows Vista is far more robust and has many more capabilities.

I don't understand what you are talking about ZenChick, at the end of the day, the thing that Woodstock wants to do is take files of his Zen, so he basically just has to go to "My Computer" and click on his device, then copy and paste the files he wants.

Let's just say it's a limitation with Creative's software. Having WMP11 installed instead of Creative's software overcomes this limitation, and you can drag-and-drop and copy-and-paste to your heart's content.
