I'm new to podcasts in general and I'd like to know what should I do to have a "podcasts" submenu in the Database or in the main menu. Should there be some id3 tag filled in a specific way?

If you want a Podcasts folder just create one and put your podcasts there. You could then use the Context menu to start the File Browser there. You could also add that folder to your Shortcuts folder and access the podcasts from there. Making changes to the Main Menu would require compiling your own build after changing the source code.
The only way I can think to see podcasts in the Database would be to tag them as Podcast and then browse to them there. I've read of people that customized their database view but when I looked at the documentation it just seemed to be not be worth the work to me. I can easily access all I need in the File Browser. TBH that might not even be the page you need to setup a custom view. It's just the one I found when I researched quite a while back.

I always play podcasts from a playlist. That way I have full control on how the episodes play

I just had some radio shows I wanted to listen. I usually don't do it. I used the file manager and everything went fine. If i'll ever need to listen to some shows again, I'll try playlists too.
