When you choose a font from the menus, only the default/ system font changes.

The theme you are using sets 13-Nimbus.fnt as the default font, but (for example) uses 08-Rockfont.fnt, 08-Nedore.fnt and 14-Nimbus.fnt for various elements in the WPS screen.

What's happening that you weren't expecting?

To have full control of fonts you're going to have to get into theme editing to some extent.

when i choose from the default fonts from the font pack when i installed rockbox, those fonts work.

i downloaded new fonts, chose some of them and none worked. they show as rockbox's default font. the itty bitty font.

Where did you download the new fonts? I just tried all the fonts included in the font pack and the unofficial anti-aliased ones and they're working as expected for me. I got those from here. http://www.rockbox.org/wiki/RockboxExtras

The clip+ has a bitmap display: the pixels are either on or off.

Anti-aliasing makes use of greyscale and doesn't make much sense on a bitmap display.

It means the fonts you've installed aren't appropriate for your device.

Have you installed the font pack? There's a lot to choose from in there.
